Look at the nail from the side — the quick appears as a pink line in light-colored nails, and as a dark shadow in dark nails. Cut just below (toward the tip of) where the quick ends. In dark nails, cut in small increments and check the nail cross-section — a dark dot appearing in the center indicates you're approaching the quick.
